Mexican White Bean Soup and Dip

This creamy white bean base can be either a soup or a dip. You can also vary the flavor and heat with additions such as green peppers, green chilis, or more chili powder. 

Ingredients

2-3 cans of white bean, I prefer cannellini beans for their protein and fiber content

1 yellow onion, chopped

2 cups vegetable broth, you can vary amount to adjust consistency

2 clove garlic, minced

1 to 2 tsp cumin

1/2 10 1 tsp chili powder

1/2 tsp oregano

1 tbl olive oil

2 tbl nutritional yeast

Optional: green pepper, green chilis

Instructions

Rinse canned beans and set aside. Heat oil in skillet and sate onions until soft.  Add garlic and green pepper, if desired.  Sate for 1-2 minutes. 

Add beans, broth, and seasonings. Cover and simmer for 20 minutes. 

Blend bean mixture with an immersion blender.  Or cool slightly and pour into a blender. Transfer back into pot or bowl and stir in nutritional yeast.
